Ingredients
- 1/2 yellow onion, diced
- 2 cloves garlic, minced
- 2 pounds chicken, cubed
- 2 cans (30oz) your favorite coconut curry simmer sauce
- 1 red pepper, sliced
- Optional: 1/2 cup frozen peas
- Optional: 2 cups spinach leaves
- Salt and pepper to taste
- Optional: Red pepper flakes
Instructions
- In a crockpot, place the chopped onions, minced garlic, cubed chicken breast, and simmer sauce. Mix well.
- Set the crockpot to low and cook for 5 hours.
- Add in the vegetables and cook another 1/2 hour to an hour.
- Add salt and pepper to your taste.
- Sprinkle with red pepper flakes if you wish.
- Serve with white rice and naan bread if desired.
