Bacon Brownies

The secret to good campfire brownies is making sure you have a portable grill with a lid, or to finish these in the oven in the RV.

Add bacon to brownies for a simple but fun new recipe that everyone loves! Oh, and bonus, this brownie recipe only uses one bowl and a pan! So clean up is a breeze once everyone has devoured the warm gooey chocolatey dessert! 

Pro tip - did you know that you can use boxed brownie mix over the campfire?

Yep! I made these bacon brownies for a small group of friends a few weeks ago and they were amazed that I used a boxed brownie mix! What I love about using them is, they have everything premeasured out and take up minimal space in the RV when I am out on the road! However, I did sneak in some bacon. And that set the whole thing over the top. 

In the morning at camp, I am often cooking bacon over cast iron on the Coleman propane grill. I always cook the entire package, because leftover bacon never goes to waste. And for this recipe, the pre-cooked crispy bacon adds that secret salty savory bite to the rich chocolatey brownies that no one sees coming - but everyone loves! 

The secret to good campfire brownies is making sure you have a portable grill with a lid, or to finish these in the oven in the RV. The air circulating around the skillet is what cooks the brownies through. I give a tip for covering with foil to trap the heat in, but a grill with a lid that closes is really helpful for successfully baking this recipe.

Pour batter into hot skillet and allow brownies to cook for about 25 minutes until set, rotating skillet as needed to avoid one side becoming too hot.

Bacon Brownies

You'll Need

  • 6 strips bacon
  • 1 box brownie mix
  • 1 egg
  • ⅓ cup water
  • ⅓ cup oil

To Make

1. Preheat the Pan - Heat a cast-iron or other fire-safe skillet over direct heat to get it hot.

2. Cook the bacon - Add the bacon and cook, turning as needed, until cooked and crisp. Remove from pan and chop.

3. Remove the skillet from heat and allow to cool a few minutes. With a paper towel, blot and wipe out any excess grease from the skillet, leaving enough to coat the pan.

4. Make the Brownies - Whisk the brownie mix with the egg, water, and oil directly in the skillet, until combined and no clumps remain. Sprinkle in the chopped bacon. Place the skillet back on indirect heat over the fire, and close the lid and cook for 10 minutes. Check to make sure one side isn’t getting too much heat and rotate the skillet. If you are cooking with an open fire or on a traditional camp grill, cover the skillet with foil immediately.

5. Bake - Allow the brownies to bake until set, about 25 minutes, rotating the skillet as needed over the heat to avoid one side becoming too hot. When the brownies are done, remove them from the fire and allow the pan to cool.* 

6. Slice and Serve - Carefully run a butter knife along the edge, and turn the brownies out to slice and serve. Or, serve directly from the pan while they are still warm. *Each fire runs differently, bake times will vary.

*Alternatively, these brownies can be baked in a traditional oven at 350 degrees until set.
