Chicken Bacon Ranch Quesadilla Recipe

A quesadilla is basically just a tortilla filled with cheese and whatever else you want. These quesadillas are packed with flavor, thanks to the chicken, bacon, and ranch dressing. And they’re super easy to make.

Kids love them, adults love them. Basically, everyone loves them. If you’re looking for an easy recipe that will please the whole family, look no further than these cheese, chicken, and bacon-filled tortillas.

Great Use for Leftovers

When I'm RVing, I want to make the most of my time and avoid spending a lot of time cooking. Therefore, I often cook more on one night and serve leftovers the second night. These Chicken Bacon Ranch Quesadillas are the perfect way to use up leftover chicken.

At the start of my RV trips, I like to pick up cooked rotisserie chicken and premade sides from the store. It makes for a really easy arrival night dinner after driving and setting up the RV. Then for the second night's dinner, I use the leftover chicken for these quesadillas, nachos, or other recipes. But, if you don't have leftover chicken, you can easily cook 1-2 chicken breasts or use canned cooked chicken for this recipe.

Substitution Suggestions

Quesadillas, like burritos, are easy to change up depending on what you are craving and what ingredients you have on hand. Want to try different variations? Here are a few ideas:

  • use different cheeses; cheddar, pepper jack, etc.
  • add sautéed onions or peppers
  • swap out the ranch dressing for BBQ sauce or salsa
  • use ground chicken or turkey instead of chopped chicken breast
  • add corn kernels
  • add black or pinto beans
  • add sliced avocado

These are just a few ideas. Be creative and make them your own!

Make-Ahead Meal Option

Want to save time? Another great thing about quesadillas is that you can preassemble the chicken, bacon, and ranch mixture ahead of time. It stores well in the refrigerator for up to 2 days or can be frozen for up to 3 months. When you’re ready to make the quesadillas, just thaw the mixture and follow the recipe as directed.

Recipe

Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 4-5 strips bacon
  • 1/2 cup ranch dressing
  • 4 large flour tortillas (burrito size)
  • 4 tablespoons butter
  • 1-2 cups shredded cheese, I like to use quesadilla cheese for flavor and the way it melts
  • guacamole (optional)
  • salsa (optional)
  • ranch dressing (optional)

Instructions

  1. In a large skillet, cook the bacon until crisp.
  2. Remove bacon from skillet and chop into small pieces.
  3. Allow the skillet to cool slightly and remove the drippings from the pan. Wipe out the skillet with a paper towel, if necessary.
  4. In a bowl, mix together the cooked chicken, bacon, and ranch dressing.
  5. In a large skillet over medium-low heat, melt 1 tablespoon of butter.
  6. Place one tortilla into butter and top with 1/2 cup of the chicken mixture.
  7. Top with a handful of shredded cheese.
  8. Fold the tortilla in half to cover the filling.
  9. Cook for 2-3 minutes per side or until golden brown and cheese is melted.
  10.  Remove from the skillet and keep warm.
  11.  Repeat with remaining ingredients.

To Serve:

Cut each quesadilla into thirds and serve with guacamole, salsa, and additional ranch dressing. Enjoy!
