Slow Cooker Walking Carolina Pulled Pork

We like to keep things simple when planning camping meals and this is one of the easy, yet tastiest. We play on the Carolina style of pulled pork sandwiches that are topped with coleslaw for that contrast of crunch and BBQ tang for this handheld gem. You can make your own favorite coleslaw recipe in advance or simply get a pound of it at the deli counter when you are getting the fresh meat.

Instructions

You'll Need

  • 1 lb. pork stew meat
  • 2 tablespoons pork rub
  • BBQ sauce
  • Fritos corn chips
  • Coleslaw
  • Fried onions – we like the Durkee brand that tops our green bean casserole.

To Prepare

Season the stew meat with the pork rub and place in your slow cooker.

Stir in about ½ cup of your favorite BBQ sauce.

Cook on high for 4 hours or low for 6-8 hours. Take the meat and then shred it.

Take your plate or tray and place a handful of chips on it.

Layer on some of the shredded pork.

Drizzle on some of the BBQ sauce.

Add a layer of coleslaw.

Top with a few of those fried onions.

Serve, go, and enjoy!
