Slow Cooker Chicken Corn Chowder

Makes 4-6 servings.

Ingredients

  • 1 lb. chicken breast
  • 4 cups chicken broth
  • 5 small, red potatoes cut into chunks
  • 8-oz canned green chiles
  • 1 small onion diced
  • 2 cans cream-style corn
  • 2 cups milk (whole or low-fat)
  • 1 tsp onion powder
  • 6 strips of turkey bacon cooked and chopped into small pieces
  • ½ tsp. pepper
  • ½-1tsp salt depending on taste
  • Optional: chopped parsley

Instructions

  • Place the chicken breast, chicken broth, potatoes, chiles, onion, and corn into the slow cooker. Set to high and cook for 4-5 hours.
  • Take the chicken breasts out of the slow cooker and shred the chicken with a fork. (Can also cut into cubes) Place the shredded chicken back in the slow cooker.
  • Add in milk, onion powder, turkey bacon, pepper, and salt and stir well. Set slow cooker to high for another 15-20 minutes.
  • Sprinkle with parsley if desired.
  • Serve and enjoy!
