Finding Your Inspiration: Cooking in the Great Outdoors

Meet Karissa and Linhbergh, an RVing couple that loves to camp, explore, and cook! Drawing inspiration from their surroundings as well as their cultural backgrounds makes their recipes even more special. Here is a look into their experience as RVers.

According to Karissa

We live very busy lives that's very go, go, go, and we come out in nature and it's just a full pump the breaks, slow down, and it's the best way we recharge.

Linhbergh and Karissa are an RVing couple who love to camp, explore, and cook. Taking inspiration from their surroundings as well as their cultural backgrounds makes their recipes even more special. Here’s a peek into the camping culinary adventures possible with an RV.

The RV Advantage: Peace and Quiet

For photographers Linhbergh and Karissa, their daily schedule is constantly packed.

“We’re always doing things,” says Linhbergh. “We’re constantly doing emails and social media, back-to-back.”

RV trips are the couple’s opportunity to escape the hectic routine of daily life and slow down to enjoy each other’s company, great food, and the nature surrounding them.

“Out here, we pump the brakes and just breathe. That has a huge healing quality to it,” says Linhbergh.

The Love Language of Food

A cornerstone of Linhbergh and Karissa’s relationship is cooking and sharing meals together. One of their favorite dishes is bánh xèo, a Vietnamese dish.

“I love eating bánh xèo because it’s just so refreshing,” says Karissa. “That’s what I love about Vietnamese food: the sweetness, the texture. It all comes together so beautifully. I love that Lindbergh shares this from his culture with me. This dish is what made me fall in love with Vietnamese food.”

The couple often cooks bánh xèo and other Vietnamese dishes during camping trips in their RV’s kitchen.

“I love that we can take this dish everywhere we go,” says Linhbergh, adding, “I’ve fallen in love with Karissa and shared so many things with her, and we’ve created this life. This dish symbolizes that.”

“The food somehow always circles back to love,” agrees Karissa.

The couple launched their joint Instagram, @gondirtin, as a fun method of compiling their adventures.

“We started the account because our clients weren’t going to want to see the camping we were doing,” explains Karissa. “So we made a completely separate account for ourselves to have fun and document our camping and outdoor life. And Lindbergh loves cooking while we’re out there because we’re so far from the city. That’s why we are @gondirtin’.”

Although the account started as a personal project, it took on a life of its own. “The account itself has become the inspiration for other people,” says Linhbergh. “They see what we cook, and they want to make it, too, which is the other big thing about all of this.”

Takeaways from the RV Kitchen

  • Rest and recharge: It’s important to periodically step away from packed schedules and prioritize spending time with loved ones. (Quality time is even better when it’s spent together in an RV!).

  • Connect over food: Linhbergh and Karissa’s appreciation for cooking meals, such as bánh xèo, is a key aspect of their relationship. Having a kitchen in their RV enhances their enjoyment of road trips and gives them the freedom to spend time together over meals.

  • Share the wonder: By posting their meals and outdoor adventures on @gondirtin, Linhbergh and Karissa have inspired their audience (24.3K and counting!) to embark on similar adventures, both camping and culinary.
