Apple Desserts: Easy, Delicious Treats for the Campground

These two quick and easy apple desserts deliver the same delicious flavors with a fraction of the work.

Campfire Baked Apple

Ingredients

  • 1 good baking apple (Granny Smith, Gala, or Honeycrisp)
  • 2 tbsp flour
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 tbsp butter (cut into small cubes)
  • Heavy-duty aluminum foil

Instructions

  1. Prepare the apple: Peel and core the apple.
  2. Make the apple crumb topping: In a small ziplock bag, combine flour, brown sugar, cinnamon, and salt. Add the butter cubes and mush everything together until well mixed. (Pro tip: Make multiple bags of this topping ahead of time and store them in your RV pantry for easy access!)
  3. Assemble the apple: Place the apple in a double layer of heavy-duty aluminum foil. Fill the cored center with the crumb topping, pressing it down gently. You can also add a cinnamon stick for extra flavor.
  4. Wrap tightly: Seal the foil around the apple, leaving some air space so the steam can circulate but ensuring the edges are tight to keep in the heat.
  5. Cook in the campfire: Dig a small hole near the edge of your campfire, away from direct flames. Place the wrapped apple in the hole and push hot coals around it. Let it cook for about 30 minutes, rotating occasionally.
  6. Serve: Once cooked, let it sit for a few minutes before carefully unwrapping. Top with vanilla ice cream if you have some in your RV freezer—absolute perfection!

Easy Apple Pocket Pies

If you’re short on time or fresh apples, this fun and crispy pocket pie is the perfect alternative.

Ingredients

  • 2 slices of soft white bread
  • 1/2 cup canned apple pie filling
  • 2 tbsp butter, softened
  • Cinnamon and sugar (optional)

Instructions

  1. Prepare the bread: Cut off the crusts and butter both sides of the bread. (I also butter the inside to prevent sogginess!)
  2. Prepare the apples: Drain and rinse the canned apple pie filling to remove excess syrup. Chop the apples into small, bite-sized pieces.
  3. Assemble the pocket pie: Place a generous spoonful of apple filling onto one slice of bread. Top with the second slice and press the edges together using a fork to seal.
  4. Cook using one of these three methods: 
    • Pie Iron: Place the sealed sandwich in a buttered pie iron and cook over the campfire until golden brown.
    • Grill or Waffle Iron: If you have a portable grill or waffle iron, use it to cook the pocket pie to crispy perfection.
    • Skillet: Treat it like a grilled cheese sandwich and cook it on a cast-iron skillet or electric griddle until golden and crispy.
  5. Serve: Let it cool slightly before digging in. Sprinkle with cinnamon and sugar for extra flavor!
