Recipe for Lemon Meringue Pie Irons at the Campground

Transform your next camping trip with a delicious lemon meringue pie made right in your pie iron!

Servings: 2
Prep Time: 5 minutes
Cook Time: 5–7 minutes

Ingredients:

  • 4 slices soft white bread (crusts trimmed)
  • 2 tbsp butter (softened)
  • 4 tbsp lemon curd (more if desired)
  • 1 cup mini marshmallows or spoonable meringue (optional)

Equipment:

  • Cast iron pie irons
  • Campfire or grill with hot coals

Instructions:

  1. Prep the Bread: Butter one side of each bread slice generously. Trim the crusts so the bread fits neatly in the pie irons.
  2. Assemble the Pie Iron: Place one slice of bread, buttered side down, into each side of the pie iron. Spread lemon curd onto one slice generously.
  3. Add Meringue or Marshmallows: Sprinkle mini marshmallows or add a scoop of meringue over the lemon curd for that classic “lemon meringue pie” touch.
  4. Close It Up: Press the two sides of the pie iron together and lock them.
  5. Cook Over Fire: Place the pie iron directly on hot coals and cook for 2–4 minutes per side, checking occasionally, until the bread is golden and crispy and the inside is gooey.
  6. Serve: Carefully open the pie iron (watch for steam!) and slide out your golden lemon meringue pie pocket. Let cool slightly and enjoy.

QUICK TIP: Use a paper towel or silicone mitt to safely open hot pie irons.
