Recipe: One-Pot Creamy Spinach Feta Pasta

Ingredients:

  • 1 lb bow tie (farfalle) pasta
  • 1 (5–6 oz) bag fresh baby spinach
  • 1 (6–8 oz) block or container of feta cheese, crumbled
  • Salt (for pasta water)
  • 2–3 ladles of reserved starchy pasta water
  • Kalamata olives (optional)
  • Cherry tomatoes, halved (optional)
  • Artichoke hearts (optional)
  • Shredded rotisserie chicken (optional)
  • Crusty bread for serving (optional)

Directions:

  1. Cook the Pasta: Boil bow tie pasta in about ⅔ the usual amount of water to build up starch. Salt the water generously. When pasta is cooked to al dente, reserve at least 2 cups of the starchy pasta water, then drain.
  2. Layer the Spinach & Feta: In a deep pot or Dutch oven, add the fresh spinach first, then pile on the feta cheese.
  3. Add Pasta & Starchy Water: Pour the hot, drained pasta directly over the feta and spinach. Then ladle 2–3 big scoops of the reserved pasta water over everything.
  4. Cover & Steam: Cover the pot tightly (use a lid or towel) and let everything sit for 3–5 minutes to wilt the spinach and melt the feta.
  5. Stir & Customize: Stir well to combine. Add more starchy water if needed for creaminess. Toss in optional add-ins like olives, tomatoes, chicken, or artichokes for extra flavor.
  6. Serve: Dish into bowls and serve warm with crusty bread. Enjoy around the fire or at your dinner table!

TIP: Want a little kick? Add a dash of crushed red pepper flakes or a squeeze of lemon before serving.
