Breakfast Sandwiches and Greek Roasted Potatoes and Onions

Campfire breakfasts just hit different! You can make all of this in one cast iron skillet over your morning fire, or use two to speed up the process.

Ingredients

  • 1 bagel per person
  • 1 egg per person
  • 1 large red onion, slice ⅓ into thin slices, and chop the rest into ½” pieces
  • 6-8 new potatoes, chopped into 1” pieces
  • 1 avocado per two people, sliced
  • Salt, pepper, oregano, olive oil
  • Optional: 1 slice of cheese per person

Directions

Start your campfire while you prep. You want it to die down a little before you cook.

Chop the potatoes.
Slice bagels in half lengthwise.
Thinly slice about ⅓ of the red onion, set aside.

Chop the rest of the onion into ½” pieces.
Wait to slice avocados until you’re ready to assemble sandwiches.

Once the fire is ready, put 2 skillets on the grate. Add 1 tbsp. Olive oil to each. You’ll fry your eggs to perfection in one skillet while you’re cooking the potatoes in the other.

PRO TIP: Always start the potatoes and onions first. They’ll take longer to cook. Depending on how many people you are cooking for, you may need to start eggs a little early, but a good rule of thumb is to start your eggs when potatoes are still slightly firm but starting to brown.

In a large bowl or ziploc bag, combine chopped potatoes, chopped red onion, 1 tbsp. Olive oil, and 1 tsp. Oregano, and a little salt and pepper to taste.
PRO TIP: You can always add a little more as needed, but you can’t take away too much salt. Go easy!

Toss potatoes and onion pieces to coat. Spread potatoes in one skillet, and stir occasionally with a wooden spoon or long handled tongs. Potatoes are done when fork tender. Remove from skillet and allow to cool slightly.

Cook fried eggs as you normally would depending on your personal preference in the second skillet. Set eggs aside on a plate or dish, covered to keep warm. Use this skillet to toast the cut side of your bagels!

Add sliced cheese if you prefer, and one fried egg to each bagel. Now, slice the avocados! Top each bagel with thinly sliced red onion, avocado slices, and 1 fried egg each. Everyone gets a side of potatoes and onions! Add a little salt and pepper as needed. Enjoy!
