Campfire Chocolate Chip French Toast

French toast is a timeless classic that has been enjoyed by many around the breakfast table for generations. For my husband, it was a special treat waking up to the smells of cinnamon and syrup, as his father prepared this breakfast upon returning from a long shift as a first responder. Nowadays, we make it more often than just special occasions, and even on our camping weekends. This classic breakfast is easy to make with endless possibilities. All you need is a few ingredients and a seasoned griddle and you have a breakfast that will have all the neighbors heading your direction. I recently discovered a delicious twist to this old favorite while using chocolate chip brioche. The combination of cinnamon and chocolate  will have you wondering what other combinations you could try.

Cooking details: Yields 6-8 servings. Preparation time: 15 minutes. Cook time: 5 minutes.

Equipment: griddle or cast iron pan, baking dish, spatula, fork and/or tongs.

Ingredients:

  • Chocolate Chip Brioche Loaf (a few days old makes it even better)
  • 1 egg
  • 1 cup half and half
  • 1 -2 tsp cinnamon
  • 1 tablespoon sugar
  • 1 tsp vanilla
  • Butter

Instructions:

  • Mix the egg, half and half, cinnamon and vanilla in a flat baking dish.
  • Preheat your griddle and grease with butter. Dip each piece of brioche in the baking dish for just a second and then flip. Leaving it too long will make the French toast soggy.
  • Place on griddle and cook for 1-2 minutes or until golden brown, then flip on the other side. Cook for another 1-2 minutes or until it’s firm in the middle.
  • Plate and serve with butter, syrup and even a sprinkle of confectioners' sugar.

Alternative: If you have a few that don’t really care for french toast, here’s an alternative that will be sure to make everyone happy. Melt a little butter on the griddle, then place a slice of chocolate chip brioche and toast until brown, flip and do the same on the other side. Serve warm and with a sprinkle of confectioners sugar and now you have a tasty alternative to the classic French toast.
