Crockpot Coconut Chicken Curry

Ingredients

  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 pounds chicken, cubed
  • 2 cans (30oz) your favorite coconut curry simmer sauce
  • 1 red pepper, sliced
  • Optional: 1/2 cup frozen peas
  • Optional: 2 cups spinach leaves
  • Salt and pepper to taste
  • Optional: Red pepper flakes

Instructions

  • In a crockpot, place the chopped onions, minced garlic, cubed chicken breast, and simmer sauce. Mix well.
  • Set the crockpot to low and cook for 5 hours.
  • Add in the vegetables and cook another 1/2 hour to an hour.
  • Add salt and pepper to your taste.
  • Sprinkle with red pepper flakes if you wish. 
  • Serve with white rice and naan bread if desired.
