Skillet Peach Cobbler

Cooking a peach cobbler in a cast iron skillet takes it to a whole new level! It’s a delicious southern dessert, best enjoyed warm with a scoop of vanilla ice cream! This is another one of those customizable recipes. Replace the peaches with any favorite fresh fruit!

One of the best things about traveling in an RV is that you likely have an oven. If not, make this delicious dessert ahead. Cool completely in the skillet, then wrap with aluminum foil. You’ll be able to reheat it over the coals of your campfire for a delicious dessert!

Ingredients

  • 5 fresh peaches, peeled and sliced
  • ¾ c. granulated sugar
  • ¼ tsp. salt
  • 6 tbsp. butter
  • 1 c. all purpose flour
  • 1 c. granulated sugar
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • ¾ c. milk
  • 2 tsp. ground cinnamon, plus some to sprinkle on top

Instructions

In a saucepan, combine fresh peach slices, sugar and salt. Heat on low, stirring occasionally, until peaches are tender.

Preheat oven to 350 degrees.

Put 6 tbsp. Butter, sliced in a cast iron skillet. Put the pan in the oven to preheat and melt the butter.

In a large bowl, add flour, sugar, baking powder, cinnamon and salt. Mix with a whisk until combined. Stir milk in until combined. Add this batter carefully to the preheated pan, then top with peaches. Sprinkle a little more cinnamon on top of the cobbler, then slide back into the oven to bake to perfection!

Bake at 350 degrees for 30-40 minutes until done. Enjoy! (or cool completely, wrap with aluminum foil, and refrigerate until ready to serve. Reheat over the campfire!)
