Viet Pham is a professional chef, winner of Iron Chef America vs. Bobby Flay, and owner of Pretty Bird Chicken. When Viet isn't taking the culinary world by storm, he enjoys getting out into nature in his RV, and foraging for ingredients to create beautiful, natural meals.

Cilantro Chimichurri


  • 2 cups of fresh cilantro (stems and leaves) about 1 large or 2 small bunches
  • 3 cloves of garlic peeled
  • 1/2 of a small red onion, peeled and cut into chunks or 1/4 medium
  • 2 tsp red pepper flakes
  • 2 tsp of dried oregano
  • 2 tbsp red wine vinegar
  • 1 cup olive oil
  • 1 tsp fish sauce
  • Salt and pepper to taste


  1. In a blender or food processor, add the cilantro, garlic, onion, pepper, oregano, vinegar, fish sauce, and 1/2 of the olive oil. Alternatively, you can chop all the dry ingredients and add to the wet ingredients. If chopping by hand, make sure you are chopping the ingredients finely.
  2. Pulse to mince the ingredients.
  3. Add the remaining olive oil and gently stir to combine.
  4. Transfer the sauce to a bowl, cover, and let it sit 20 minutes at room temp before serving.



  • 3-4 whole trout, cleaned and gutted
  • 2 lemons sliced thinly
  • One bundle of fresh thyme
  • 2 tb olive oil
  • Salt and pepper


Brush olive oil all over the fish and inside the belly cavity. Season the fish with salt and pepper, including inside the belly. Slice the two lemons thinly and stuff each trout belly with 3-4 slices of lemons and add a small bundle of thyme to the belly.


  1. If you are grilling, make sure the heat is on medium high and cook each side of the fish for about 6-8 minutes, being careful not to lift the fish too much.
  2. If you are roasting in the oven, preheat the oven at 375F and roast in the oven for 20 minutes until the flesh is no longer transparent.
